Dorayaki / Pancake Sandwich

Dorayaki... also called 三笠みかさ (Mikasa), which is a popular sweet for tea time in Kansai area (midwest Japan). If you already have あん (An /Sweet vegetable paste), you can make this sweet by simply baking small pancakes. This recipe introduces moist pancakes with honey. (Cooking Time: about 1 hour)

Ingredients (for 5 eaches)
Egg2 eaches
Sugar2 tbs.
Honey or 水飴みずあめ
Mizu-Ame /Starch Syrup
2 tbs.
Wheat Flour (All purpose)100 g
Baking Powder1 ts.
Water or Milk80 mL
粒餡つぶあん
Tsubu-An /Sweet Azuki Bean Paste
suitable amount (about 150 g)

Directions

  1. Beat eggs in a bowl with a eggbeater. Mix sugar and honey well in the bowl.
  2. Sieve wheat flour and baking powder into the bowl and mix them well. Gradually add water or milk and mix well.
  3. Leave the dough for about 30 minutes at room temparature.
  4. Make 10 pancakes. Grease a frying pan or a griddle and warm to middle heating range. Slowly pour constant amount of the dough on the griddle to make it in round shape. About 30 mL (2 tbs. = 1 fl. oz.) of the dough may be a pancake with about 9 cm (3 1/2 inches) in diameter.
  5. BakingWhen the edge of the pancake becomes dry and rough with bubbles, turn it and bake until the other side is also brown. Move it onto a dish to cool.
  6. Sandwich suitable amount of Tsubu-An paste between two pancakes and serve.
