どら焼き
Dorayaki / Pancake Sandwich
... also called 三笠 (Mikasa), which is a popular sweet for tea time in Kansai area (midwest Japan). If you already have 餡 (An /Sweet vegetable paste), you can make this sweet by simply baking small pancakes. This recipe introduces moist pancakes with honey. (Cooking Time: about 1 hour)
Ingredients (for 5 eaches)
Egg | 2 eaches |
Sugar | 2 tbs. |
Honey or 水飴 Mizu-Ame /Starch Syrup | 2 tbs. |
Wheat Flour (All purpose) | 100 g |
Baking Powder | 1 ts. |
Water or Milk | 80 mL |
粒餡 Tsubu-An /Sweet Azuki Bean Paste | suitable amount (about 150 g) |
Directions
- Beat eggs in a bowl with a eggbeater. Mix sugar and honey well in the bowl.
- Sieve wheat flour and baking powder into the bowl and mix them well. Gradually add water or milk and mix well.
- Leave the dough for about 30 minutes at room temparature.
- Make 10 pancakes. Grease a frying pan or a griddle and warm to middle heating range. Slowly pour constant amount of the dough on the griddle to make it in round shape. About 30 mL (2 tbs. = 1 fl. oz.) of the dough may be a pancake with about 9 cm (3 1/2 inches) in diameter.
- When the edge of the pancake becomes dry and rough with bubbles, turn it and bake until the other side is also brown. Move it onto a dish to cool.
- Sandwich suitable amount of Tsubu-An paste between two pancakes and serve.
Notes & Arrangements
- If you use commercial pancake mix, please make pancake dough by following the directions of the product and then mix honey well.
- For preservation, please wrap each with a plastic film and keep in refrigerator or freezer.
- Ordinary inside of Dorayaki is Tsubu-An, but you can also sandwich your favorite insides such as chestnut paste, pumpkin paste, strained Azuki bean paste with chopped walnuts, white bean paste with chopped fruits, etc.
